My Favorite Cookie Recipes

 
 
Chocolate Chip Cookies
This has long been the favorite at our house.  I have always had to triple the usual recipe. 
 
2/3 cup shortening
2/3 cup butter or margarine, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 tsp. vanilla
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup chopped nuts (optional)
2 packages (6 ounce each) 
semisweet chocolate chips
Heat oven to 375 degrees.  Mix thoroughly shortening, butter, sugars, eggs and vanilla.  Stir in remaining ingredients.  (For a softer, rounder cookie, add 1/2 cup flour.)  Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet.  Bake 8 to 10 minutes or until light brown.  Cool slightly before removing from baking sheet.  Makes about 7 dozen cookies.
 
Peanut Butter Cookies
This is another favorite at our house.
 
1/2 cup shortening (half butter or
margarine, softened)
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1-1/4 cups all-purpose flour
1/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
Mix thoroughly shortening, peanut butter, granulated sugar, brown sugar and egg.  Blend in flour, baking soda, baking powder and salt.  Cover and chill.  Heat oven to 375 degrees.  Shape dough into 1-inch balls.  Place 3 inches apart on lightly greased baking sheet.  With fork dipped in flour, flatten in crisscross pattern to 2 inches.  Bake 10-12 minutes or until set but not hard.  Makes 3 dozen Cookies
 
Amish Sugar Cookies
This is one of my favorites.  I don't frost these cookies, 
but roll them in a cinnamon-sugar mixture.
 
1 cup sugar
1 cup powdered sugar
1 cup butter or margarine
1 cup oil
Beat above ingredients together.
Add:  2 eggs
4-1/2 cups flour
1 tsp. vanilla
1 tsp. almond extract
1 tsp. baking soda
1 tsp. salt
1 tsp. cream of tartar
Roll dough into balls and roll in a sugar/cinnamon mixture.  Flatter balls with a glass.
Bake at 325 degrees until brown, about 8 minutes.
 
Leila's Ginger Snaps
I got this recipe, along with the Amish Sugar Cookie recipe from a 
Norwegian lady I once took care of in the nursing home I worked.
 
3/4 cup shortening
1 cup sugar
1 egg
4 tablespoons molasses
1 tsp cinnamon
1/2 tsp. ginger
1/2 tsp. salt
2 cups flour to which 1-1/2 tsp. of 
baking soda has been added.
Mix above ingredients.  Roll into balls, and then into sugar.  Place balls onto cookie sheet.
Bake at 325 degrees until brown, about 8 minutes.
